Mexican Chicken Salsa Salad
Mexican Chicken Salsa Salad is refreshing, healthy, and delicious. Most of important, it requires no cooking.
I could seriously eat all day every day!
- 300 g chicken breast
- 1 can black beans
- 1 or 2 cans sweet corn
- 1/2 head romaine lettuce
- 1 sweet pepper
- 7-8 cherry tomatoes
- 1 medium red onion
- lemon juice
- 1 avocado
- salt, peppers and pepper powder
Step 1. Chop romaine lattuce and place it in a bawl.
Step 2. Dice peppers, cherry tomatoes, avocado and onions and place it on the top of chopped romaine lattuce.
Step 3. Drain and rinse black beans and corns and place it in a bawl.
Step 4. Toss chicken with salt and pepper powder and cook in a pan or oven. Slice chicken when it is cool and place it on the top of a salad.
Step 5. Drizzle salad with lemon juice and your favorite white dressing.
