As I mentioned in the post “Apple and squash pancakes”, our son is not a fan of veggies,  moreover, meal’s texture and appearance also determines if he will be willing to eat it.

Thus, these cauliflower balls are not only veggies-based, but also are very suitable for kid’s lunch box, looks and taste delicious, and, finally, very easy and quickly to make.

Ingredients

Cauliflower balls

  • small cauliflower
  • 1 cup cheddar cheese
  • 1 cup parmesan cheese
  • 1 cup bread crumbs
  • salt
  • 1 egg
  • garlic powder (optional, cause some kids do not like it’s taste)

Instructions

Step 1. Preheat the oven to 200 degrees.

Step 2. Put the cauliflower into boiling water and steam for 5 minutes.

Step 3. Take the cauliflowers from the pot and dry with a paper towel.

Step 4. Chop the cauliflower with a knife into very small pieces. If you have a 1 or 2 years kid or you like smooth texture, I would suggest to use a food processor instead.

Step 5. Add shredded cheeses, egg, salt, bread crumbs and garlic to the chopped cauliflower and stir it together.

Step 6. Take a table spoon of the mixture and form balls.

Step 7. Place balls on a baking paper and bake for 15 minutes.

Step 8. Serve them with a tomato source.
